Omurice-Japanese omelet rice. It's something that kids grow up with and still love and crave as adults. A bite of this tasty dish bring tears of nostalgia to adult eyes. One might call it the Japanese macaroni and cheese.

This is something that I personally grew up with and enjoy. Don't be alarmed by its looks. You might say, "Egg, rice, and ketchup???? What are you thinking?"-as the hubster did. But honestly, it's delicious, as he later found out.

Ingredients
-Cooked rice (left over rice from previous day works best.)
-2 to 3 eggs per omelet-1 Stalk of Green onions
-1 White Onion
-Ketchup
-Oil
Dice white onion and fry in oil until clear. Add rice (I usually use about 2 cups of rice and then divide up the portions once it's cooked), diced green onion, and 1 TBSP of oil.
Let that fry for a few minutes, string every so often so the rice doesn't stick to the pan.
Add ketchup (honestly, I've never measure this out...I was always taught to add enough so that the rice turns a slight red. If I was to measure this... maybe 1/4 a cup. It really depends on the amount of rice you're using and what ingredients you have.)
Make your omelet as you would normally. Try to get it as flat as possible and in one piece.
Scoop desired amount of rice on a plate and cover with omelet. Drizzle ketchup over egg. If you would like it to be spicy, drizzle sriracha.
Other ingredients to add if desired: mushrooms, peas, carrots, meat, eggplant, peppers, broccoli, cauliflower, and the list goes on and on. Give it a try!

Love ketchup on eggs! I don't understand -- or trust -- folks who don't like it.
I guess Egg foes Stavvy and Marja are off your X-mas card list!
